Scrapple Anyone ?????

Good morning everyone...a happy Tuesday to all. What??? Oh, no I spelled it correctly. Did you think I meant Scrabble? No this is Scrapple. It's a breakfast dish I wanted to share with you. When my husband was growing up he remembers his dad fixing this dish. He's not sure where the recipe originated or if his dad made it up, but they would have it when they needed to stretch the food budget, and with five kids this was somtimes necessary. We love just it because it is yummy. There really isn't a recipe so let me tell you how it is made. In a large skillet melt about 2 tablespoons butter. While this is melting peel a baked potato, cut it up and add it to the melted butter. While this is heating and getting just a bit brown.........Cut up two slice of white bread, be sure to leave the crust on. Add this to the skillet.At this point your are more or less frying the potatoes and bread together so you might need to add a little more butter. While your potatoes and bread are browning and getting a bit toasty.............Whisk up two or three eggs, add the eggs to the potatoes and bread and cook just like you would scrambled eggs. Season with pepper and if you like a touch of salt. That's all there is to it and now it's.....

ready to serve. Trust me this is nummy. Serve some nice fruit and your good to go. If you do try Scrapple you can adjust the recipe by just adding another baked potato, extra bread and eggs.

Hi Linda, I love your recipe, and sounds like it would make a great breakfast or snack. Our food that is made to last on a budget is Stew....... growing up dad would make a very large pot of stew consisting of veg, maybe meat like beef or lamb in small pieces, potatoes and he would make dumplings. This pot would last us ages and we ate it for dinner, tea, and supper! We put it over pancakes or yorkshire pudding too! I still love it today, it warms us up and is a filling meal....and a blast from the past.

That sounds so delicious ~ very comforting and perfect for a rainy day like today. I love to eat breakfast for dinner..I'll have to try this sometime, or have my hubby cook it since he's the breakfast chef in the house! Thanks for sharing the recipe and story that goes along with it,

My Uncle was in the Navy he shared a recipe with us corn and eggs like yours ,doesn't sound good but it really is.

It does sound good....butter can make everything taste good....I can't think of anything, but I do remember mom would make on friday during lent, she would take a whole potato and boil it, peel it, and cut it in half...then she would brown it on all sides and serve it with cottage cheese...and she would add chives on top...it really was good....and my husband use to love fried green tomatoes.. slice, and dip in flour and fry, then add egg....and we use to have that alot..... judy

ok, well, I re read it and I would have to substitue gluten free bread (ie rice bread) but it would work!!

Good Afternoon Linda,
I know I left a comment on here yesterday. I guess I was reading it when our power went out. You recipe sounds so good. When I cook things like soups, beans, or chilli, I make extra so we can eat off of it a few days. I fix breakfast alot of times for our supper. Sometimes it taste better at night than in the morning. Hi Linda, Although the name Scrapple sounds a little scary, the recipe itself sounds delicious! I'm off the carbs for a while, but once I start eating them again this sounds like something I would love:>)

I don't see anyone commenting on east coast Scrapple. Your recipe sounds delicious, but it is not the scrapple we eat here in the Mid-Atlantic area of the East. Scrapple is made of various pieces of the pig(sometimes even the snout) and ground up with spices and cornmeal and shaped into a loaf. It is then sliced and fried. It is delicious. It is made by various companies and sold in the grocery stores. It is great with eggs or even in a sandwich between two slices of white bread. I grew up on it.

Hi Linda!

Your scrapple is different than the scrapple, J grew up with, here in East Missouri. Our scrapple is like violetlady's scrapple. J was so delighted, a few years ago, when he found scrapple in one of St Louis' well known grocery stores, Dierberg's. I don't eat scrapple. J cooks it and has it with eggs, etc for breakfast. In the old days scrapple was made so that every bit of a hog was used, nothing wasted. He always says they ate every bit of the pig, except the squeal!

Your scrapple recipe sounds delicious. I'm going to copy it and make it sometime.

I love scrapple!!!!!! We lived in Dover Del. when I was young and we lived next door to a farm and one thing that they made was scrapple.. We would go over to the scrapple house and they would always give us scrapple to take home..YUM We went back to Dover Del about 8 years ago and found that old farm.. and sure enough they were still there and we bought Scrapple and brought it back to Oklahoma!!!!!! YUM

I like the sound of your scrapple! Like Priscilla we too use to make a stew,but from a tin of corned beef, half of it would be mixed with chopped onion and tomatoes and used for sandwiches and the other half would be put in a pan with lots on root vegetables and lots of potatoes covered with water and a stock cube and boiled till everything was just about cooked and sometimes we would add dumplings or just thicken the juices with cornflour and we always had chunks of bread to mop up the gravy!We still eat it today and if plenty is made it will last a few days!Kathyann and the girls
