~ Salad Bar and Eggplant ~

Yesterday I went to our weekly farmers market and bought the most wonderful veggies. Tomatoes, three varieties of squash, an eggplant, onions and bell peppers. Tonight we enjoyed part of the bounty....we had a salad bar, I also prepared the eggplant...it was delish, well we love it and it's simple...
The eggplant is on the green plate to the left of the bacon pieces. The way I prepare it is you peel the eggplant, slice it fairly thin, dip it in egg, then crushed crackers and then saute it in melted butter.....yummy. Have you ever had eggplant? Well, did you like it:)?

  4. I think I had some eggplant once. Yours looks like fried green tomatoes and I think that is how it was prepared when we had it. I love going to Farmer's Market. There are such lovely colors there. Have a blessed day,

    I could eat meals of fresh veggies all the time - especially fresh tomatoes and white corn on the cob.

  7. I just love farmer's markets. Yes, I have tried eggplant, battered and fried and also in a lasagne dish. Both were wonderful. blessings,Kathleen

  9. never tried eggplant, it is on my list of foods to try, but this i know, anything dipped in cracker crumbs and fried in butter has to be delicious!

  10. Hi Linda, There was a farmer today at the Flea Market I attended and he had beautiful veggies, which I bought. But I didn't buy the egg plant because I don't know how to cook it. Thank you for your recipe. I will certainly try it. xo Lynn

  11. I love eggplant in casseroles or fried. When I make eggplant parmesan I have to fry a little extra eggplant because I must have a taste!

  13. I have a couple eggplants out in the garden that are almost ready to pick! I'll have to try this! I planted some white eggplant this year- don't know how it will taste, but it looks very interesting growing out there!

  15. Would you believe I've never had eggplant so have no idea what it tastes like? I know, I'm soooo deprived! hehe I fix my zucchini in a similar way and I enjoy that:-) There's just nothing like fresh produce...I can't wait until our garden is ready but that won't be for another couple of weeks yet.
